Chinese Health Gem of the Month: Vitality Enhancing Ginseng Chicken Soup

Ginseng chicken soup is a common and popular dish consumed on a regular basis in China. This promotes overall health and longevity, boosts the immune system, moderates pain from chronic ailments and can help improve fertility. The herbs used in this recipe are generally safe, but if you’re concerned with their quality or efficacy, consult a physician.  



  • Whole Chicken, skinned (dark skinned is preferred over white skinned chicken, especially in addressing fertility issues) 

  • Chinese Yam (15g) 

  • Dang Gui/Angelica (12 g) 

  • Huang Qi/Astragalus Root (15 g) 

  • Ginseng (10 g) 

  • Fresh Ginger (2–3 thin slices) 

  • Lin Zhi/Rae Reishi Mushroom (5–7 thin slices) 

  • Shan Yao/Raw Goji Berries (15 g) 

  • Red Dates (3–4 pieces) 



  1. Rinse the herbs thoroughly with water. 

  1. Rinse the chicken with water. 

  1. Place the chicken in a pot and fill with water. Add the herbs to the pot. Cook under a high flame until boiling. 

  1. Once the water is boiling, turn the heat down to low and cook for an hour. 

  1. Add 1–2 teaspoons of cooking wine (preferably Chinese Rice wine) and salt (to taste, as desired). 

  1. Serve the soup while hot.
